Job Description

POSITION: Director of Food & Beverage
DEPARTMENT: Food and Beverage
REPORTS TO: Assistant General Manager and General Manager
FLSA STATUS: Salaried-Exempt

SAVOR…Chicago, the leading food service provider located at McCormick Place Convention Center has an immediate opening for a Director of Food and Beverage. This position is responsible for direction and coordination of the Food and Beverage operations at McCormick Place. Ideal candidate should have strong knowledge with managing Food and Beverage operations including Banquets, Catering, Bars, and Branded Concepts and Retail Merchandising: ensuring company standards are maintained.

Major Responsibilities
• Oversees Food & Beverage operations during events to ensure client satisfaction and quality control standards
• Oversees the development of work plans, show floor set-ups, assigns appropriate duties to subordinates; makes hiring decisions
• Markets Food and Beverage services to clients and establishes Food and Beverage controls
• Evaluates facility practices and recommends improvements to better reflect the needs of the Client and the facility and/or to improve the efficiency and safety of operations, in compliance with organization
• Analyzes information concerning facility operations such as daily food sales, patron attendance, and labor costs to prepare budget and to maintain cost control of facility operations
• Inspects food service facilities to ensure equipment and building meet state, local health laws and internal regulations
• Maintains cost and quality control standards and reviews inventory controls with Food and Beverage Director
• Inspects and samples prepared foods to maintain quality standards and sanitation regulations

Education and/or Experience
• Bachelor’s Degree in Food & Beverage Management or related field desired
• Minimum five (5) years industry experience in Management level position with three (3) of those years in a Director or Senior Manager position in a convention center; or equivalent combination of education and experience
• Demonstrated ability to lead multiple teams in areas of restaurant management and catering services
• Strong P&L knowledge
• Certification in Food Service Sanitation and Basset
• Prior experience in an Union environment
• Computer literate (i.e. Word, Excel, PowerPoint, Access)
• Must be flexible, have a sense of urgency, be able to respond quickly and resourcefully to internal and external issues.
• Must be able to work in a fast paced environment
• Must be able work flexible schedule including evenings and weekends
