Aramark Sports + Entertainment is looking to hire a new Sr. Executive Chef for our Chicago District ! The Senior Executive Chef will assume the properties senior culinary leadership position and will lead as a strategic partner to the General Manager, District Manager and Regional Executive Chef executing programs that are aligned with Global Operational Excellence (GOE) business initiatives. The position reports directly to the General Manager with a dotted line to the Regional Executive Chef. In addition to the Senior Executive Chef responsibilities, this person will be responsible for developing and driving one centrally led initiative put forth by the Regional Executive Chef, District Manager as well as the GOE team. Examples may include standardized menus, productivity initiatives around food and labor or development within F&B.
Job Responsibilities
Growing the Top Line:
+ Work with Regional Executive Chef, General Manager and District Manager to establish the properties development goals, new concept roll outs, and assist in the design and implementation utilizing internal/external resources to accomplish set goals and site specific set objectives.
+ Develop new and innovative site specific concepts in partnership with Client, General Manager and Regional Executive Chef.
+ Assist site Controller in the development of yearly budgets and fiscal objectives.
+ Administer goal and objective development with General Manger as dictated by Performance Management initiatives.
+ Responsible for the oversight and control of site P/L, Food and Labor cost, and NVD requirements.
+ Assist operational teams as needed to execute special or high profile events within the organization.
Capturing Productivity for Growth:
+ Primary liaison between Senior Executive Chef/Regional Executive Chef focused on driving key initiatives in cost and productivity, compliance standards within the following areas:
+ Food management process: master the menu, perfect purchasing, power up production and wipe out waste
+ Labor management process: smart scheduling, handle on headcount, wages that work and tackle turnover
+ Completely support all food and labor (with respect to culinary areas) related to standardization and compliance initiatives from the GOE team.
+ Ensures proper workplace safety, food safety, HACCP and sanitation programs are in place and are regularly monitored on property.
+ Driver for the site culinary implementation, training, monitoring/measuring and progress communication of the Executional Excellence platform(s).
+ Driver for the execution, management and communication of specified product and authorized vendor compliance.
+ Collaborate with Regional Executive Chef and other lines of business to ensure best practices are identified and implemented
+ Partner with Regional Executive Chef and Property Chefs to develop, review and approve concession/premium Food and Beverage menus based on menu schedule cycles.
Leading Our People:
+ Responsible for all property culinary and talent development
+ The Senior Executive Chef supports the hiring process and development of the property
+ Partner with the Regional Executive Chefs performance management process, performance objectives for the chef?s respective teams
+ Assume oversight for the development and execution of targeted culinary programs, events, reward and recognition programs.
+ Support all culinary skills training programs.
+ Support culinary team and bench strength development initiative.
+ Delivering Financial Commitments:
+ Drive growth and productivity initiatives as they align to the business and site specific financial commitments.
Qualifications

+ Provide the culinary technical skills indicative of a senior leader of a multi-million dollar F&B account.
+ Provide strong analytical and quantitative skills as it relates to managing food and labor to financial commitments.
+ Responsible for managing strong accounting fundamentals and controls.
+ Responsible for managing down food and labor cost while exceeding quality and presentation objectives.
+ Create profitable menus grounded in insight and analytics.
Operational Skills
+ Comprehend and understand the different aspects and layers of our business which would include high volume concessions, restaurants, premium services, catering, and suites.
+ Manage through and strip apart the different layers of food and labor productivity within the dynamic layers of the business.
+ Manage the dynamics of a multi-business operation.
Leadership Skills
+ Provide strong leadership, communication skills, personal development and training.
+ Exhibit an aptitude and track record of being able to influence others.
+ Manage the properties executive leadership hierarchy as well as the corporate hierarchy and corporate support divisions.
Qualifications:
+ Associates Degree and/or Bachelor’s Degree in Culinary Arts strongly preferred.
+ Minimum 10 of industry & culinary management experience.
+ Demonstrated experience managing in a diverse environment with focus on client and customer service.
+ Previous experience with HACCP.
+ Ability to control cost – food & labor.
+ Understanding, support and development of sustainable cuisine.
+ Experience in demonstration cooking.
+ Menu writing and development ability.
+ Computer literacy including word processing and presentation software.
+ People management and culinary leadership experience.
+ Personnel development and training.
+ Organizational skills and ability to introduce or implement and execute S & E culinary program and brand development.
+ Prior P&L accountability and/or contract-managed service experience is highly desirable.
+ Experience working in a union setting strongly preferred.
