Summary        

 This position is expected to supervise the daily operation of the kitchen and ensure the highest quality of food products, assisting with all food preparation and plating of food in accordance with CJE SeniorLife standards.  This position reports to the Executive Chef or Director of Dining Services and may be required to supervise other staff positions

 Essential Duties and Responsibilities

  • Supervise kitchen in Chef absence and ensure all food safety and sanitation practices are being followed
  • Set up food service line and workstations with needed condiments. Ensure all condiments and garnishes that are required are prepared and served with the appropriate foods
  • Prepare and coordinate all meals from standardized recipes.
  • Assist and coordinate prep and production sheet for the following day’s menu including special events meals.
  • Conduct a daily pre-meal meeting with BOH and FOH staff during each meal period to ensure proper tasting, knowledge of meals and menu terminologies
  • Assist Chef on ensuring adequate food supplies are in house and properly rotated and in inventory.
  • Ensure all food and equipment temperature are being monitored and recorded daily.
  • Ensure kitchen, equipment, stock rooms, coolers, and freezers are clean and free from rust, debris, and no signs of mold.
  • Ensure all food is labeled, dated, and stored in accordance with local, state, and county health department policies.
  • Assist in the adherence to maintaining budget compliance for daily food costs.
  • Assist in applying appropriate loss & theft prevention procedures and report any violators immediately.
  • Assist in training of new and current kitchen staff.
  • Maintain kitchen cleanliness and food preparation according to state and local health department code requirements.
  • Keep waste to a minimum by utilizing food storage and food recycling techniques.
  • Perform all duties in adherence to CJE SeniorLife standards.
  • Strive to maintain a safe working environment through the prevention of accidents, the preservation of equipment, and the achievement of safe working practices.
  • Maintain a positive and professional demeanor toward all residents, visitors and coworkers.
  • Adhere to all policies and procedures of CJE SeniorLife. Adhere to all directives, policies, and procedures of the local community
  • Perform other duties as assigned.

Supervisory Responsibilities                                               

 Carries out supervisory responsibilities in accordance with CJE’s policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work of staff or volunteers; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems; maintaining relations across Agency departments, functions, and committees as well as community organizations and the CJE Board.

Education and/or Experience   

One Year certificate from college or technical school; or three to six months related experience and/or training; or equivalent combination of education and experience

Certificates, Licenses, Registrations

SERV-SAFE Certified or equivalent. Obtain/hold any local, state and/or county required food handling/sanitation licenses and/or certificates.

Mathematical skills 

Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals. Ability to compute rate, ratio, and percent and to draw and interpret bar graphs.
