POSITION TITLE: Kitchen Supervisor
LOCATION/DEPT: Food Services
REPORTS TO: Operations Manager
FLSA CATEGORY: Non-Exempt
STATUS TYPE: RFT

DEPARTMENT MISSION
To support the full mission of The Salvation Army by providing compassionate, professional service to the families and single women residing at the Lodge and the community in a team-focused manner with the entire Lodge staff, providing nutritious meals.
OUTCOMES
The Kitchen Supervisor is primarily responsible for supervising kitchen staff, the preparation of meals for the nutrition program, menu planning, and inventory upkeep.

ESSENTIAL DUTIES AND RESPONSIBILITIES
The kitchen is staffed (both paid and volunteer staff) in a manner that meets department objectives.
Participate in interviews and hiring decisions.
Evaluations are conducted on staff performance.
Make recommendations on performance counseling plans to the Operations Manager as needed.
Training, orientation, and ongoing supervision is provided for all Food Service staff.
Make recommendations on training for kitchen staff to the Operations Manager.
Ensure that an effective schedule is in place so that the kitchen is appropriately staffed.
A system is in place to provide coverage for absences, both planned and unplanned.
Adherence to Department of Public Health requirements as well as agency/program guidelines and procedures is accomplished.
Healthy meals are planned and menus developed consistent with the requirements of the Illinois State Board of Education, through the oversight of a licensed nutritionist.
Food that qualifies is prepared for next day (i.e. desserts).
Ensures that all food is dated and stored on a first in out (FIFO) pattern.
Ensures that all prepared food that is kept to be used is dated and stored properly.
Oversees that supplies are obtained from the storerooms, coolers, or freezer for the following day cooking.
The receipt of deliveries and maintenance of food service areas are organized and supervised.
Oversees the food and non-food items are received and stored with assistance.
The food service area and all food service equipment is cleaned and maintained on a daily basis at standards which insure full compliance with all health and sanitation requirements.
Food and equipment are maintained and properly secured from theft.
All daily cleaning tasks assigned are completed and documented.
All required administrative duties and documentation is properly maintained in a timely manner.
All other duties as assigned.
REPORTING RELATIONSHIPS
This position is supervised by the Operations Manager.
This individual relates to and interacts with a wide range of contacts both within and outside The Salvation Army. In these contacts, they act as a representative of the Army and its mission.
This position also provides daily direction to Food Service staff.
PERFORMANCE MEASUREMENTS
This individual will be evaluated on how effective the outcomes of this position are achieved, as well as timeliness, accuracy, and completeness of accomplishing assigned goals.

EDUCATION/EXPERIENCE
High School diploma or GED equivalent is required.
Must possess current City of Chicago Food Service/Sanitation Certificate
Five years food service management experience
Must have at least one year cooking and menu planning experience.

PHYSICAL DEMANDS/WORK ENVIRONMENT
This position is required to do light to moderate physical work.
In order to successfully perform the essential functions of this position, the employee is regularly required to use standard kitchen equipment.
Must be able to walk up two flights of stairs and lift up to 70lbs.
The work environment for this position includes a residential and kitchen environment with a low to high noise level.
Must be able to work with clients that have poor social skills, suffer from mental illness, and have substance abuse problems.
