The Restaurant General Manager will manage the 312 Restaurant, an Italian upscale restaurant at The Allegro Royal Sonesta Chicago.
The ideal candidate will have experience managing Italina upscale/fine dining restaurant.

Job Description

Essential Duties and Responsibilities include the following. Other duties may be assigned.

  • Monitors performance to ensure adherence to all service standards, sanitation standards, productivity standards to ensure exceptional guest satisfaction.
  • Monitor and forecast restaurant's revenues and expenses to ensure company goals are met on a monthly and yearly basis.
  • Maintain inventories of related restaurant equipment.
  • Develops and implements policies and procedures and ensures consistent application thereof.
  • Responsible for the hiring, coaching/counseling, mentoring, training and professional development of restaurant management and employees.
  • Ability to organize multiple projects; manage and prioritize multiple tasks and meet deadlines.
  • Exhibits a positive and involved team attitude to all and promotes positive relations through an environment that encourages open communications, trust, and mutual respect.
  • Strong communication, organization, problem-solving, and follow-up.
  • Ensure the quality levels of restaurant products, standards in production, services, facilities and guest satisfaction.
  • Implement and monitor ordering and receiving program to ensure proper quantity and prices on all restaurant purchases.
  • Plan and organize Special Events within restaurant
  • Execute and promote the Accident Prevention Program to minimize liabilities and related expenses
  • Perform any other job-related duties as assigned.



Strategy and Planning:

  • Manage all aspects of the food and beverage service department.
  • Direct and complete scheduled inventories.
  • Prepare weekly work schedules in accordance with staffing guidelines and labor forecasts. Adjust schedules throughout the week to meet the business demands.
  • Coordinate details of upcoming functions with the Catering & Conventions Services managers.



Financial Management:

  • Monitor payroll in the department ensuring meal breaks are taken and time cards are accurate.
  • Manage the operating budget and achieve all revenue and expense targets.
  • Actively participate and advise in the food and beverage budget and forecasting processes



Managing your Team:

  • Conduct pre-shift meetings with staff and review all information pertinent to the day's business.
  • Assist in annual performance evaluations of the team members.
  • Ensure employees are treated fairly and equitably.
  • Coach team by providing specific feedback to improve knowledge, skills, and performance.
  • Establish and maintain open, collaborative relationships with direct reports and entire Food & Beverage team. Ensures direct reports do the same for their teams.

  • Minimum 3 to 5 years' experience as a restaurant general manager
