Duties and Responsibilities
- Assumes responsibility for kitchen in absence of the Director of Food Operations.
- Supervises and coordinates activities for cooks and food-preparation workers; instructs cooks and others in proper preparation, cooking, garnishing, baking and presentation of food; cooks, bakes, and prepares food.
- Assists with developing recipes and menus, taking into consideration such factors as seasonal availability of ingredients, food surpluses and leftovers, prep and cook time, number of guests, etc.
- Works to meet expectations for all special catering needs.
- Provides full meal cycles for students who may be resident at the property for up to eight weeks at a time.
- Orders food and other supplies; checks quality of received supplies and food products.
- Checks the quality of raw and cooked foods to ensure that standards are met.
- Monitors sanitation practices to ensure that employees follow standards and regulations.
- Coordinates billing for services provided, food purchases and other supplies; maintains/tracks budget.
- Inspects supplies, equipment and work areas to ensure established standards are met; arranges equipment purchases and repairs.
- Performs related duties as required.
Minimum Education and/or Work Experience
High school diploma and two to three years of related experience required. Must have previous kitchen supervisory experience.
Qualifications
This position requires thorough understanding of all federal, state and local food sanitation regulations.
Communication Ability:
Good communication and interpersonal skills. Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals. Ability to clearly write routine reports and correspondence. Ability to speak effectively before groups of customers; English/Spanish bilingual preferred.
Computation Ability:
Ability to apply concepts such as fractions, percentages, ratios, and proportions to practical situations.
