Position Summary, Requirements, and Qualifications
Overview
The department of Campus Dining handles all things dining on campus. From residential meal plans to event catering, we provide nutritional food for students, faculty, staff and guests. We manage over a dozen eating establishments at NIU including residence hall dining, restaurants and coffee shops at the student center, and the cafe in Barsema Hall. We employ the students and professionals who work in our restaurants and cafes.
Position Summary
Under the supervision of the Unit Management and Culinary Worker IV - Baker IV, this individual assists with the production of quality as well as visually attractive bakery goods and supervises the Baker II position(s), Food Service Sanitation Laborer, and student staff, when Unit Management or Culinary IV - Baker IV are not present.
Detailed instructional recipes for all bakery items to be prepared are provided. This position is required to occasionally manipulate recipe size and ingredients to complete the assigned product(s).
Essential Duties and Responsibilities
Baking - 20%
Prepares and bakes cakes, cookies, cobblers, pies, puddings, doughnuts, and other desserts.
Prepares icings, toppings, fillings, and sauces for baked goods.
Cooking - 20%
Prepares and bakes food for special diets from recipes formulated by a dietitian or other employees.
Supervisory - 20%
Performs and/or directs the performance of complex quantity cooking and baking that requires a thorough knowledge of cooking techniques.
Oversees and participates in, placement and transport of bakery items for delivery and bakery area cleaning activities.
Other Related Duties - 20%
Performs duties consistent with the lower level in this series (Culinary Worker II).
Performs other related duties as assigned.
Inventory - 10%
Assists with inventories of food, prepares and reports shortages to designated personnel.
Supervises the use and disposal of left-over foodstuff.
Training - 10%
Trains workers in food preparation, service, sanitation, and safety procedures.
Assists in the evaluation and maintenance of sanitary conditions.
Minimum Required Qualifications (Civil Service)
High school diploma or equivalent.
One (1) year (12 months) of work experience that is comparable to that described in the lower level of this series (Culinary Worker II).
Possession of the Illinois Department of Public Health, Food Handler Training Certification (from an American National Standards Institute (ANSI) accredited trainer).
Knowledge, Skills, and Abilities (KSAs) (Civil Service)
Knowledge of materials and methods used to prepare food on a large scale, use and care of relevant utensils and equipment and food values and nutrition.
Knowledge of sanitary procedures and directives; how to use simple cleaning solutions and equipment.
Knowledge of basic arithmetic operations and their applications.
Knowledge of quality control analysis, such as conducting tests and inspections of products, services, or processes to evaluate quality or performance.
Skill in giving full attention to what other people are saying, taking time to understand the points being made.
Skill in completing assignments accurately and with attention to detail.
Skill in developing specific goals and plans to prioritize, organize, and accomplish your work.
Ability to read and interpret relevant information and individual judgment to determine whether events or processes comply with laws, regulations, or standards.
Ability to plan meals on a large scale.
Ability to work with and supervise other kitchen employees.
