DuPage Golf is looking for a talented Kitchen Manager to come be part of our team at Greenway Tap in Addison, Illinois. Job Summary

This position supervises kitchen staff in the food service operations at the District golf facilities in order to maximize efficiency and ensure customer satisfaction.

Essential Duties and Responsibilities:

  • Supervise assigned personnel engaged in the daily functions of kitchen operations at District golf facilities.
  • Apply best practices, maintain appropriate labor costs, schedule kitchen personnel to ensure appropriate coverage and manage food costs within approved budget.
  • Enforce and educate staff regarding sanitation and cleaning guidelines to the DuPage County Health Department standards. Oversee cleaning and maintenance of all kitchen floors, equipment, coolers, freezers, and dish machines.
  • In conjunction with management, maintain a dynamic and seasonal menu which is reflective of the restaurant concept.
  • Ensure quality and consistency in the food service preparation by watching portion sizes, recipe following and waste. Monitor food for flavor and presentation.
  • Order all food related products and supplies for the food service operations, determine type and quantity of food ordered and prepared by working with fellow supervisors and managers.
  • Work with the Clubhouse Coordinators and Golf Services Supervisors daily, to plan for present and future operational needs ensuring that the restaurants can maximize efficiency.
  • Maintain best practices for inventory controls. Oversee, receive and check-in products for quality and accuracy. Ensure proper rotation of products (FIFO), store products properly, and check invoices for accuracy and price fluctuations.
  • Process and pre-approve kitchen payroll.
  • Provide ongoing feedback, coaching, and counseling in a constructive manner, and confront challenging situations directly with a positive approach, aiming to support and mentor employees in their development and progress.
  • Resolve and rectify issues, prioritize based on gravity and urgency, analyze the root cause, gather relevant information, develop and evaluate viable solutions, decide on the most effective and logical solution, and plan and execute implementation.
  • Supervise staff, including hiring, scheduling, and assigning work, reviewing performance, and recommending salary increases, promotions, transfers, demotions, corrective actions, or terminations.
  • Foster a working environment that promotes safe work habits; Become familiar with and observe all applicable safety rules, policies, and work procedures; Follow all safety rules that pertain to the duties performed and support all aspects of the District's safety and risk management program; Keep work area clean, orderly, and free of hazards; Immediately report all unsafe conditions and incidents.
  • Maintain a supportive working environment and demonstrate a desire to exceed the expectations of internal and external customers.
  • Perform other duties as required.

Requirements:

  • 18 years of age or older at time of hire.
  • Associate's Degree in Culinary Arts or related field; 4-6 years of related experience in food and beverage management or banquet operations, with 1-4 years of direct supervisory experience (Includes: training and coaching, responsible for preparing evaluation, assigning work, responsible for work of employee supervised); or equivalent combination of education, training, and experience.
  • Must have and maintain CPR, AED, and First Aid Certification or obtain upon hire (training provided).
  • Possession of a Certified Food Protection Manager certification issued by the State of Illinois or able to achieve within 30 days of hire.
  • Experience in planning, assigning, scheduling, training, and supervising kitchen staff.
  • Open availability including nights, weekends and holidays.
  • Strong communication and interpersonal skills.
  • Knowledge of food preparation, presentation methods, and quality standards.
  • Familiar with the maintenance and care of culinary facilities, equipment, supplies, and materials.
  • Strong knowledge of restaurant sanitation standards, food safety procedures, and state and local food service laws and regulations.
  • Experience with estimating food and plate costs, developing menus, preparing meals, and monitoring and purchasing food inventories.
