Job Description
Analyze menu items and standardized recipes to assess nutritional content, including calories, macronutrients, and major allergens. Develop and update nutritionally balanced menu options based on seasonal ingredients, customer dietary preferences, and company objectives. Review ingredient specifications and supplier information to verify consistency with nutrition and allergen standards. Evaluate food preparation, storage, and handling practices for alignment with applicable food safety and sanitation requirements and recommend corrective actions as needed. Maintain nutrition- and food-safety-related documentation, including ingredient and allergen references and sanitation checklists, to support regulatory compliance. Prepare written guidance and training materials for kitchen staff on portion control, allergen awareness, and safe food-handling practices. Monitor relevant nutrition and food-safety guidance and advise management regarding updates affecting menu offerings.
